Let’s Eat! But first…

Scheduling a Slaughter Date

We cannot take an animal that weighs more than 1700 pounds

Please call (812) 246-9911 to schedule a slaughter date. Our normal slaughter day is Tuesday. If a holiday falls within the week, then the slaughter day may change. For Tuesday slaughter days, the following drop-off times must be observed:

  • Drop off for Beef: Monday between 7:00am and 2:30pm unless Monday is a Holiday, then it will be Tuesday at 7:00am

  • Drop off for Bison: Tuesday 7:00am

We are a very small-scale facility; we have limited space availability. When we hold a slaughter space for your animal, and you do not show up, we are adversely affected. Due to an increase in last minute cancellations and no-shows, we must put the following policy into effect: We will call you one week prior to your scheduled slaughter date to confirm your appointment. If you confirm that you will be here, but you do not show up, your future slaughter dates may be cancelled. Please do not give your slaughter appointment to someone else; if you don’t need it, please contact us to cancel it. We have a waiting list of folks needing to get in. If you give your appointment away, your future appointments will be cancelled.

We are a USDA Inspected Facility:

USDA rules stipulate that your animal must be able to walk off of your trailer, or we cannot accept it for slaughter. If your animal falls during unloading and is unable to get up, or it is rejected by the USDA inspector for any other reason (sickness, injury, etc.), you may take the animal home if it is still on your trailer, otherwise the USDA must condemn the animal. Disposal fee is $50.00.

Cut Instructions and Your Customer:

Please have a cut sheet filled out completely. We need the cut sheet the same day that the animal arrives. You can bring it with you when you drop the beef/bison off, it can be emailed to info@memphismeatprocessing.com or if your customer needs help filling it out, they can call us @ 812 246-9911 the same day the animal is dropped off.

Note: Please advise your customers that are sharing a 1⁄2 of a carcass: Both customers will be on the cut sheet, circle “Quarters”. Both quarters will be cut the same exact way.

Our recommended hang time is 10-17 days for beef depending on size and fat cover and 6 days for bison. We will text and/or email your customer when their order is ready for pick up. Orders need to be picked up within 5 days.

> There is an additional storage fee charge of $10.00 per day for orders not picked up within 5 days of notification that it is ready for pick up. If the order is not picked up within 30 days, it will be sold to cover the cost of processing.
